Chef Antonio Saéz

Trained at the prestigious Berasategui school, Antonio inaugurated the kitchens of the now three-Michelin-starred Lasarte in Barcelona in 2005. He led the restaurant until departing to delight diners in Abu Dhabi in 2012, where he directed the opening and operation of a Spanish restaurant in the luxurious Fairmont Hotel. He returned to the city in 2014 to take charge of the gastronomy at Hotel Arts, before teaming up with his Mexican partner to launch his own project, XUBA, in November 2021.

In Mexico, the taco is a fascinating product that originates and is enjoyed in streets and markets; it is a highly versatile, fun, incredibly flavorful, and nutritious food. XUBA rescues its essence in a casual and contemporary atmosphere where, honoring tradition and its roots, tacos are prepared in front of the customer with artisanal tortillas freshly made to order. The iconic Tacos al Pastor or Cochinita Pibil are a must, but Chef Antonio reserves sections of the menu to showcase his culinary background and surprise diners with haute cuisine and seasonal creations.
